The Free From design labels have been created for catering and hospitality operators who are responding to an increasing number of customers looking to exclude certain ingredients from their diet. It is estimated that around 40% of the UK population are seeking a healthier lifestyle by restricting their diets, often by avoiding gluten, dairy or meat. This percentage also includes those with intolerances. In September 2014, YouGov reported that around 8% of the UK population have a dairy intolerance and 7% have an issue with gluten or wheat. Added to this, 1 in 8 people class themselves as Vegetarian and avoid all meat products.
It is becoming increasingly important for caterers to offer alternative options to cover the free-from sector. Coeliac UK estimates that caterers miss out on approximately £100 million worth of business from gluten-free diners and their friends by not offering enough choice within their menus.
The Food Allergy Training Consultancy (FATC) ran a survey last December and quoted that “Currently food businesses are not paying attention to detail when managing the food allergy customer.”
